I'm loving the music of OneRepublic, because of their use of Strings and Organ in many of their songs, like Au Revoir, Wanted, All Fall Down, What you Wanted, Secrets, All The Right Moves and Apologize and many more of their songs, sometimes as a main part of the song and sometimes just as an ornament. But I sadly haven't found any other pop band that really does this. Bonus would be if they also used piano and acoustic guitars.

For classic pop/rock, ELO (Electric Light Orchestra) covers that well

Check out the first few Elton John albums - Paul Buckmaster collaborated to arrange and conduct some beautiful strings on those albums. And they satisfy your bonus piano ๐Ÿ˜ƒ
