It wasn't just the guitar. Dude could play anything. Horns, drums, keys. He had a 5 octave vocal range. Like the only one hitting notes higher than him was Mariah Carey. Dude could dance like James Brown. And the guy just could not stop writing hits. And then you get into the albums he's produced. I mean it just goes on.
He was just a complete package. One of those kinda special prodigies that comes along only every once in a while.
But when talking about his guitar playing most people point to his solo during the tribute to George Harrison tribute in 2004 where he is 46 years old. https://www.youtube.com/watch?v=dWRCooFKk3c skip to 3:28 if you wanna get to his solo.

He's master of the devastating solo and electrifying riff, was also a considerable talent when it came to vigorous funk and elegant chord-craft. Never one to shy from demonstrating his superhuman guitar credentials, Prince's canon of studio albums features innumerable examples of his talent.

His performance on While My Guitar Gently Weeps at the Rock Hall of Fame is one of my top 10 all time Guitar God performances

I've been told that Prince had absolutely perfect pitch. He could hear something like a table being scraped across the floor and accurately tell you the note was between a B and B sharp.
He also supposedly had a small keyboard and recording set up in every room in his house. Inspiration hits while taking a shit? No problem, let me just get that down mid dump.

Edit : He was encouraged to play music by both parents and was given a keyboard @ 7 y/o. Shortly after, his father gave him a guitar. I bet he spent hours upon hours learning not only every note, but every squeak or tone he could make with a guitar. He had the sponge-like brain of youth and encouragement from parents.
