For the crust, I just used a deep dish crust recipe from the tender flake box, but I’m sure you could use any pastry crust recipe. I pre-baked it with pie weights for about 20 minutes.

Oh, for Pete’s sake, don’t cry! The recipe is in a reply to the comments if you sift through. Totally easy to make. The only adaptation is that I used castor sugar instead of granulated sugar in the meringue

It was not skill. I simply followed the recipe and used the whipping attachment on my KitchenAid. Also use castor sugar instead of regular granular sugar.

My French grandmother used to come visit us once a year and make homemade lemon meringue pie, your picture took me back <3

Later in life my grandma started tying to make it healthier and would make the crust out of Phyllo dough, yuck! The og crust days were the best

I think the gas stove would help a lot, I'd be surprised if an electric could get that same browning. Still very impressive though, and the care you put into is evident.

Thank you this was actually my very first attempt at a lemon meringue pie🙂. I think I just lucked out and got a good recipe. To be honest, I just got a new kitchen aid at Christmas and wanted to use the whip attachment. That’s why I decided to make it

The trick to keeping the lemon part from going watery is to put the meringue on top of the lemon while it’s still quite warm. It doesn’t seem like that should work but it does.
