I know there's lots of software available to record gameplay video actively, like as in you know you want to record everything after you hit record. But I want to record like a dashcam, where it keeps recording and when you hit a button it will save the last however many minutes you want only, and automatically keeps overwriting gameplay where you didn't want to save any of it. Doing it the normal way takes up so much disk space and has you needing to keep on top of deleting uninteresting video.
Also when I use the XBox Game Bar video recorder, the playback doesn't look good compared to when I'm actually playing. Low FPS and and seemingly a slight degradation of graphic quality are what's in the videos I make. What do I need to know here to make it look better? Is it just the software being used, or something else?
Any suggestions would be appreciated.

NVIDIA has this allready built in GeForce experience. Just open the overlay and set how long is the time it saves. If ur using NVIDIA GPU that is.
