From the fridge, I didnโt want to bring it to room temp in case the puff pastry got soggy, not sure if it would or not

I wouldnโt say difficult, takes a bit of time. And I know itโs not what is typical of beef Wellington itโs supposed to be done in one tenderloin, but I cut it up into two to make individual ones because I find wrapping those easier, all the same ingredients though.
