Hey there. I make and sharpen knives as a hobby. The problem you run into is that most places use machines so they can crank through lots of knives. They do a decent job but they will not get your knives “scary sharp”. I’ve been toying with the idea of selling my services.

I use a pretty expensive manual sharpening system that puts a precise angle and a mirror edge on your knife using high-end Japanese water stones. Happy to sharpen your knives for you this weekend if you’d like. You can Venmo me what it’s worth to you after you get home and try them out. Not happy? Don’t pay a cent :)

Totally understand! I have a couple hand forged Japanese knives that are really hard to come by that I wouldn’t trust with anybody (including myself) except a master sharpener. I’m no master, but I think I’m pretty darn good haha. Most of the knives I sharpen are Shun/Wustof-grade or below.
