Does anyone know any decent mountains or places to hike, camp and fish? Every good area I’ve found in New Haven county is owned by the water companies and you can’t camp there.

The Appalachian Trail run through the north west corner of the state. There are about 44 miles or so in Connecticut. It is a beautiful rocky hilly hike and there are designated camping places along the trail. Part of the trail runs along the Housatonic River, I’m not sure if it is only catch and release. You can also get permits to camp at various state parks in the state on the DEEP website.
Can't build a fire though.
Pachaug Forest? Closed to cars until April I think
Got a boat? Seldon's Island in Old Lyme has primitive camping spots. Beautiful island

Can’t camp in most. State parks, a few allow camping. None allow fires.

Not really off the beaten path considering it’s very popular but you can camp and fish in Bigelow Hollow state park…not sure if permit is required or not. There’s an AT style open faced shelter or two as well you can hike in to and plenty of hiking trail loops.
I know it isnt what you’re asking but Green Mtn. Nat forest in VT is you best bet. For CT, you have some marginal campsites but they are jusssst bad enough that the VT drive is worth it.
Also the Adirondack park in NY.
More lakes, rivers & forest then one from CT could imagine.
Spring/early summer is blackfly season. They are vicious! You won't die or anything. But they'll drive you mad!
But it's worth it. Outside of the open ocean, it's the only place I've been that was devoid of man made sounds. No aircraft, no trains, no highways. It was awesome. I've never been west thou.
Plus the fishing!! Pike, small mouth, giant yellow perch, 2-3lb brook trout! Lake trout.
