I've been wondering if they should use cameras which can see into the infrared and uv, to give the image processing more information to work on.

I think thats the real reason why Radar is used. Lidar and cameras see pretty much the same, whereas the wavelength of Radar can penetrate things like rain and snow, and thereby provide good "sight" under those conditions...
I think going full "predator" mode with infrared and uv would not make so much sense

...and to my knowledge Vaymo seems to use the most sensors: Lidar, Radar, cameras and ultrasonic sensors.
