I've always scanned documents with my printer and then dragged them into a Google Drive folder, but just discovered that you can use the app to scan documents directly. I'm not sure if this works on iOS.

On the home screen click the "add" icon, then "scan."

On IOS you can sign a document using the built-in signature feature in the files app.

For those who don't use Drive, there is an app called TurboScan. You can snap a pic and it converts to a PDF, then you can email it. Unlimited scans for some fairly nominal price.
