What does side by side mean? Does that mean there was an additional cab on the side?

It means the riders are sitting side-by-side. Not like on a fourwheeler where they sit one in front of the other.
His was a 2020 yamaha, and they had 4 people inside. So, I'm going to assume it was a larger one, like the one in the background on this page https://www.yamahamotorsports.com/utility-side-by-side
