I can, the command key however…
It’s not like it’s not mapped somewhere but given how many people who game whine about accidentally windowing out, why not avoid the issue?
I use macOS and Windows. I use control on caps and winkey is mapped to left control.
Like everything in keyboards, just because the layout doesn’t have a dedicated key where it’s ‘supposed to be’, doesn’t mean it isn’t there.
I've been gaming on a keyboard since I was like 3. Not once have I misclicked the windows key during a game. Is that genuinely a widespread issue people were having?

Seriously, man, do some research before asking questions!
Most, if not all, custom keyboards are programmable so you could bind the Windows key anywhere else or even on a layer.
