Ne Obliviscaris is incredible music, but you have to be able to handle harsh vocals. Amazing musicians. Also Animals as Leaders. I'm sure you've heard of them but if you want some music that you can really dive into and enjoy nuance check Tool out.
Not guitar-based, but if you like CHON and Covet, I recommend mouse on the keys, they're a keyboard-led instrumental post-rock band. Their first album, An Anxious Object, is killer.

Got one you probably won't hear elsewhere. The Entrance Band. Guitar based I guess psychedelic rock? At one time Thurston Moore called him the best guitarist of a generation, so that's pretty good praise.
I'd suggest Wandering Stranger and Prayer of Death to start with.

You should expect to like critically acclaimed classic albums when you give them enough of them the chance and listen to them all the way through. Music documentaries and things like song exploder is nice. My favourites are Sound Opinions classic album dissections. Their dissection of Astral Weeks and Exile on Main st. And Blue are high points.
Otherwise take a break from music and listen to podcasts or whatever
