There's a sequoia in California I've been inside that was carved out to be a bar back in the days.

Why was it necessary to cut an opening in the tree when it would have been easier to make a path around the tree?

For sure. I don't know how much of a difference it made (probably a lot) but I think the original hole was made by a fire and they hollowed it out further to drive through it.

The only good thing that may have come from stuff like this is it allowed the average person to be up close and personal with these trees by making them a tourist attraction which in turn might have helped with their preservation.
