Any phone is going to suck. You can't get nice focus on an object 238k miles away, through the atmosphere, while it's illumination is reduced becauee of the eclipse, in a cell phone camera sensor that's the size of the tip of your pinkie, at night.
If it's low light, does your phone have a night setting that you're using? If so, it may be taking a variety of slower exposures and using software to merge them but it's more susceptible to movement.
