Even crazier, he doesn't need to do either. He's already worth $600 million, so his admittedly-jaw-dropping compensation from Top Gun: Maverick does not change his quality of life in any substantial way. Also, he personally owns a P-51 Mustang. (It's the same one featured in the film.)

Please don't tell me you thought he was actually flying them

I'd be willing to bet he's had his hand on the stick once or twice. Flying ain't hard. Landing is a bit tricky.
I was fortunate enough to work at General Dynamics in my late teens and 20's. Scrounged some parts for the department that built the simulators. One fine weekend the supervisor of the department had some down time and I got to fly one for a few hours. Managed to get up and off the ground, fly around, even did some simulated fighting and got a few 'kills', but LANDING? hahahahaa.. nope.

He's definitely flown before, but not in the movie.

The pilots were explicitly told not to let him touch any of the controls or instrumentation.

He doesn't even fly them, he just rides in them. Wouldn't even be much time in the air as well
