I find husbabnd pillows very comfortable for reading in bed but I don't have back problems so I can't say whether it's beneficial for people who do.
Go the ebook route, which usually isn't nearly as good as reading an actual book, but allows for more comfy curling up options.
If you use an e-reader, there are holders that basically strap book to your hand so you don't have to grip it and can use it with just one hand. I find that allows me try positions that would be uncomfortable if I was actually clenching the book or having to use both hands.

audiobooks open up all kinds of options. they're my go-to now
I heard of someone who has a contraption overhead so she can lie flat on her back and look straight up into it. An occupational therapist would probably advise. I think there are some good EDS groups around with websites. Though I'm sure you've already done an online search. Hang on in there.
I made a strange contraption that is literally 2 pieces of rope and some wood screws. The screws are drilled into the ceiling and I used the ropes and tied knots to make loops (it looks like a little hammock). I use it for reading books, watching videos on my phone/tablet. I no longer have to hold up anything and it's so much better for my shoulders and neck.
When you're not reading, are there positions you can hold comfortably for long periods of time? I'm guessing it might be easier to use those as a starting point, since the things that are comfortable for people without back problems might be less helpful to you.

I make a throne of pillows to support me in a comfortable position and usually sit up somewhat in bed. If I start getting uncomfortable, I switch up my position and move the pillows.
