I'm not sure that the extra time to get initial heat matters overall. The time difference thing matters for quick cooking stuff, but if you're doing something like boiling a pot of water, cooking chicken in a frying pan, or something like that? The more efficient option is electric by a wide margin.

More efficient yes, but gas are still better for cooking in terms of even cooking and timing. Feel like you shouldn't be arguing that they're the same, you should be arguing that the benefits don't outweigh the negatives.

They are not inferior for cooking, that's the whole point. Why would every new restaurant be using gas stoves if they're inferior?
