This is confusing for me because Italian Americans also call pasta sauce gravy 🍝. Where I come from, gravy is that brown stuff they serve with roasts etc.

Anything made from animal drippings/fat could be considered a gravy. A Sunday gravy is getting its flavor from beef, pork and sometimes veal. In this case it's sausage.
