They are filter feeders at the bottom of the ocean.

To add to the Filter Feeders point, lobster used to be extremely plentiful in certain areas, but it doesn't keep very long. With advancements in modern refrigeration and transportation, getting lobster to places you normally wouldn't find it is more accessible, but also more expensive.
