Not OP, but that's definitely tofu. I think they use firm tofu in kimchijjigae.

But while I'm here, this isn't the dish in the post, but I do have a tofu dish I think you can try from the Philippines. Tofu Sisig is a non-vegan one that I have tried but this Vegan Tofu Sisig looks good, too. Might not even need mushrooms.
