I didn't know there was a topping! I had to look that up and it looks delicious. I'll have to add that next time. When I had it in Peru it was just plain but maybe I'm misremembering.

Next time, get aji Amarillo or for me the NY style green sauce. It's a game changer and makes this dish awesome.

That sounds so good. I'm definitely going to pick that up on my grocery run tomorrow. I just made it again and made a sauce with mayo and that asian garlic chili paste I had on hand and that was really good. I can't wait to try it with the real aji amarillo sauce. Authentication on sauces is always a battle, but the concept of aji among Peruvians is outside my pay grade. I've admitted a preference for one style which is inauthentic, but great. Try a aji amarillo and a NY green sauce and choose your own adventure, one may be of your choosing.
