You can! I created this one on Xbox Series X. Took a bunch of available assets to do this one. This scene took around 2 hours to build. Here's a video showing how I did it! https://youtu.be/rZ9Br7necSI

Yeah I haven't really touched the single player in Far Cry 5, just build stuff. Not interested in Far Cry 6 as it doesn't have the editor!
