The History Channel made an FPS during the civil war on PS2. It was awesome and also terrible. Need to load your rifle? You bet you need to put in the powder and stock all which takes several minutes.

The closest thing I know of is Hunt: Showdown. 1895 Louisiana bayou with zombies. PvPvE extraction type game.
