Why is it worlds oldest ottoman documents and not just oldest ottoman documents?

Because of the other worlds that have their own Ottoman documents that may or may not be older.

Possibly because "Ottoman Documents" refers to documents from within the Empire itself.... "World's Oldest..." refers to documents referring to Ottoman Empire from outside empire?

Or... the author of the headline just didnt think...

How different ottoman turkish was in 14th century to the one in the late 20th century, has there been any noticeable change to amout of influence both arabic and persian had into it or didn't remain the same till it's end ?

In terms of daily spoken language used by the common folk: mutually intelligible with the modern Turkish.

Official documents are mostly unintelligible if you do not know all the loanwords from Persian and Arabic tho, even if you can read the alphabet.

It surprised me that Greeks lived in peace during early Ottoman Era. Per article ottomans didn't bother as long as they paid their tax
