In his other video you he also described why it’s so bad, basically comes down to software. You are actually better off taking a photo with iPhone X and below devices because that’s when Deep Fusion is turned off.
An ok fix for you at the moment is to basically take only raw photos. That way the photo you take will still look bad (the jpeg preview will have Deep Fusion baked in) but you can rescue the photos you really love by “developing it”. You can use most editors you like, but the two I use which is Lightroom and Darkroom. Both have an option to turn off Deep Fusion (in darkroom it’s called tone map and in Lightroom it’s called profile). Then you can re-export the jpeg without the junk (I.e Deep Fusion).

Exactly, he said it’s best for all the other things that it does, including video, user experience, speed, white balance, etc. For photos it was ranked 11th (or something like that forgot exact number).
