It’s generally pretty easy to tell how cooked a steak is by the texture. Any point between blue and rare would probably the most difficult.

And how tight they feel. You can use your own hand and fingers as a guide. My (chef) father taught me this as a kid.

Yup, I use this all the time. Interestingly I use the back of my hand though. Same concept, just back of hand.
