Fairy rings are most definitely a real thing. You have to remember the mushroom you see is just the reproductive organ, the actual fungus and organism is the mycelium network underground that's probably that whole circle if not much bigger.

My understanding is old mushrooms die and leave the younger ones. Eventually the old ones are completely gone and the newest have formed a circle around where the old ones used to be. But Wikipedia has a much clearer answer
