I’ve never seen it. I love the parallel development of young Vito building up the family while Michael destroys it at roughly the same age. I can’t imagine watching all of their respective scenes isolated in chronological order with the first film stuck in between. It would completely destroy the counterpoint that the second film achieves.

I mean yeah that’s true, but if I want to watch the originals I can do that no problem. I don’t really consider the Epic to be the “definitive” edition tbh (let’s be real, not everybody is gonna wanna watch a 6 hour film) but I’m just curious as to how I can watch it again because it’s been difficult.

Wikipedia says that it might be available through HBO streaming. It was on Prime for purchase but I don't think it is anymore

When Don Fanucci sees Vito Corleone in the dark corner, he says something that the closed captioning didn't translate. Turns out it is "what do you have in your hand?"

I used to own a VHS version of that, it's a great film. Wish I could find it on DVD.
