On one hand it does seem like the couple is money-hungry, but on the other it says health inspectors did find rat droppings at the restaurant. I don't know who to believe

Rat droppings found in NYC restaurants are common. It's almost inevitable.

Rats found in food is much more rare and entirely a different story though....

True, but they’ll likely give you a probation window of a week or two for you to clean things up and try again. Unless it’s really bad.

Having rat droppings in a restaurant is bad. But that doesn't make it logical that someone would cook a mouse or rat and it end up in a soup. It's highly unlikely.

I didn't say it means they cooked the rat, but it does cast doubt on their press statement of being squeaky clean victims and that everything is okay with the restaurants safety. Btw rat droppings is more than just bad, it's grounds for getting shut down

The couple isn't money hungry. They're pretty well to do from well off families. Money is the least of their worries. Health is. No amount of money can pay for the many things you can possibly get from rats. Death included. Let that sink in.
