People who obey the rules of grammar closely are more likely to spell it as "youse," as are the Gen Xers who have spelled it "youse" for thirty to forty years.

What county do you live in? I grew up in Gloucester County Sourh Jersey, and summers and holidays in West Oak Lane. Finished high school in the Northeast at Cardinal Dougherty. I never saw "yous" but can understand how the word must have evolved to drop the e on the end. It could be a County/Region thing, so I'm curious where your home base is.

Grew up in NE Philly, went to Judge. To be honest, I've never said youse growing up, for us it was always more "yiz". Maybe that's why I really never saw it written.
