trust me, those in the bbq community dont care for it much either. its terrible. their brisket is an embarrassment to brisket. they over cook everything. even the photos on their site you can't see smoke rings.
I've traveled all over the us for bbq. big rigs is a joke.

I'll be honest, monroeville doesn't really have anywhere good to eat unless you want fast. dad's, carhops, thats really about it. otherwise it's pizza. nothing to really brag about here. rather cook myself.

im sorry my standards are above what the local restaurants can put out. also, more people are into bbq than just restaurant owners.
I don't know why you're so butthurt I hate big rigs, you sound just like the owner when someone gives him the 1* he deserves. the other mediocre bbq places around here are nothing to write home about either. Nothing has tickled my fancy better than what I can make at home, especially when it can be made properly. with a proper smoke ring and mouth feel.
I urge you to taste actual good bbq. travel, do a bbq tour in texas, go to nc and do a whole hog tour. watch some videos online and see why having a brisket that is the consistency of roast beef is not quality brisket. why the first few hours are so important to smoking your meat correctly and why pellet smoking is for the birds.
Im not surprised the folks around here who consider a bbq, hot dogs on propane to take offense to my take that the bbq around here sucks, but it does. sucks to suck.

I'm not offended you don't like Big Rig's.... to each their own. If you don't like any BBQ around here that's fine, I'm just surprised you consider yourself in the know of the local BBQ community when you stick your nose up to them so much though.
If I was to go anywhere in the world for BBQ where would I go that's good? A specific place not a region.

thats probably because it wasn't a conversation. you questioned my opinions, and i answered. i think you're just mad i don't think big rigs is good bbq cause you seemed to take it rather personal. you also won't tell me your experience with bbq. once i again whats you're favorite bbq in the whole world is so vague how can i begin to answer that? if you want recommendations for good bbq, the answer becomes dependent on other relevant factors.
are you only able to eat at one bbq place in austin? im gonna have to say franklins because its the go to classic. but if you want some really awesome bbq go to la barabaque, micklethwait, and leroy and lewis. drive up to fort worth for goldees.
want whole hog in nc, you have to have skylight inn and sam jones then pick a couple others,but nothing will top skylight. get some chicharrons for snacking later.
want to try and bbq at home, first off don't try to do it in a pellet smoker, they suck. make sure you know how to properly trim a brisket, something big rigs does not. choose your wood wisely, texas is known for post oak. watch some how to videos online. learn the important temps and times. meat will be absorbing the most smoke the first two hours of smoking. this is when your ring is formed and is why its important to not f it up.

lol, you're hilarious. smoke ring is important to how well you bbq. don't call it bbq if you can't even get a smoke ring, which isn't surprising because they use a fancy oven.
the quality of their brisket is still absolutely terrible. its over cooked and has the consistency of roast beef. so now we have a bbq joint that A. can't smoke their meat well and B. can't cook their meat right.
Texas would ruin them if that was served down there and they're some of the nicest people ive ever met.
