It was a way for bakeries to get around health codes. Taking off the diary allowed bakeries to serve the pizza right from the counter, making it a quick and easy lunch. Plus it’s delicious!

I've been eating pizza strips since I was kid, and I've never heard this before. Sounds like a really interesting origin story, and I'd love to bore my friends with this fun fact if it's true.

Tbh that’s just what my Italian uncle told me 🤷♀️ always made sense to me seeing that they are a staple in bakeries so take it with a grain of salt

Idk if that is true many of them also sell pizza strips with cheese and other toppings from the counter.
