Cash really makes little difference. Maybe for a mom and pop shop.
Either way, you are just teeing yourself up for problems later.
The state knows people do this and are especially vigilant.

Buying things like $100 of liqour or some groceries occasionally you wont get caught. There is legitimately no way they know unless you are getting like a car or a washing machine.
Personally I do actually declare nh purchases on my taxes at the end of the year when I need to. Because honestly its not worth the risk to me.

Liqour does get taxed under sales tax though. You are supposed to declare it.
