My first thought is they had an accomplice behind the bar or otherwise working for the establishment. If your credit card is down as a tab, it might be copied or scanned.

Yup. The accomplice employee has your credit card number if you used it.

Oh man. What if your right. Some one recommended to speak to the establishment/bartender to see if this has happened before, but what if they are all in on it!?
