I would agree that popularity doesn’t matter. But, I would decide on aesthetics rather than what keys you need. If you get a smaller board you can always use layers, especially if the board is qmk/via compatible. Also, layers can be more comfortable than using a bigger keyboard. Lastly, you can always get a separate numpad if necessary.

I would probably recommend a polycarbonate, or fr4. Since it is going to be you first real custom board. I would say polycarbonate is a bit more forgiving when it comes to the switches you pick, it should carry less spring ping, leaf ping, and unpleasant sounds.

You could wait for the qk60 too, that is dropping next quarter. That is the only thing I would recommend as an alternative. Additionally, their is the mode envoy since it is a 65%, but it will take a while to ship too.
The nk65 is one I would not recommend due to it just being too barebones of a design and the value not being there.
The q2 is good, but it is also a bit of an industrial design, very angular yet not as clean as the tofu.
Tofu 2.0 is a great value and honeslty, if you want to get it now it isn't a bad option. Only alternate if you want to buy now is the envoy. I would look it up and do more research. (make sure to also look at the qk60, though it is a 60%).

I don’t think zeal switches are that great. I bought some táctiles from them and were really pingy. Like way too pingy…. I did not enjoy them.
