OP needs to give us a little more information about what their abilities and expectations are.
I have heard great things about Cochran's, especially for people skiing for their first time. If it is your first time, you should get a lesson.

He usually makes tacos or empanadas completely from scratch on Saturday afternoons. It would be worth timing the trip around that if you can!

They are just outside of Rutland and are a great low key place that buys and roasts their own coffee. The selection changes all the time.

I would say Killington is hitting peak right now. Bear Mountain looks great today. You have good timing this year.

VT State Parks are all awesome, and there is a lot of variety all around.
Woods Island is a cool spot because of how few sites there are and how far apart they are from each other. It does require you to get out to the island and bring all your gear, including water, but there are private companies that will bring you out on a pontoon for pretty cheap.
Some of the parks have built cabins, which are super cozy and are a lot easier than tenting it.
Do you have an area of Vermont you want to be near? Will you be looking to get out on the water, or go for a hike?
