They aren't making up drinks from scratch in an actual craft cocktail bar. All the prep work is done, it's primarily just mixing the drink. It takes 5 minutes at most to smoke a drink after it's in the glass. 10 to 20 min wait for the drink depending on other orders coming in.
Still hella expensive though.

Agreed, it's been the coldest winter we've had in the East Bay for a while. Snow on the mountains across San Pablo Bay that I've never seen before.
