If you are able to drive, I absolutely second the NEK. Willoughby is breathtaking, and the NEK is just a unique little section of VT. Parsons Corner in Barton is a good place for a nice foodie meal, and Parker Pie in West Glover has excellent localvore pizza and beer. If you are able to come after Memorial Day, the weather will be nicer and lots of hiking and biking trails open.

You could look for a place in Middlesex. Close enough to the Montpelier train station to bike, and you would find good restaurants in Montpelier. Just be mindful that you are aiming to visit during mud season, which may make for a harrowing ride if you are using dirt roads.

Now that the border has fully reopened, crossing it is not an issue at all. There are tight restrictions on what types of produce and goods are allowed across the border, mostly cheese, citrus, tomatoes, anything with soil (plants), etc. So as someone else mention, research restrictions before you buy.

It's not uncommon for me to cross the border and see a bag of tomatoes on the concrete blocks next to the border patrol agent. It's a bummer.
