The 14 pro does have one of the best cameras according to DXO mark. The pixel 7 pro has 1 point more and the huawei mate 50 pro has 3 points more, but is just as expensive and worse than the iPhone 14 pro in every other category.

It indeed is possible, but it's extremely hard, because iPhone's have 2 different "buckets". 1 for third party files and one for system files. Which makes it really hard to influence something in the system files bucket. iPhones with iOS 16 have something you can enable called "lockdown mode", which completely locks off the system files "bucket" from everything, making it impossible to get hacked.
