Yes. The writing is outstanding. The dialog can sometimes be a bit florid but it rarely feels inappropriate for the show or the speaker. Also, keep in mind that dialog is just one element of good writing. The characterization, in particular, is also superlative.

I personally loved the show but agree the books are even better and worth a read regardless. I think the first few seasons they were a little hamstrung by being on Syfy. Avasarala just isn't the same without her f-bombs!

This. Breaking Bad and Better Call Saul are best understood as one long-form work. And together they make up the single greatest show in television history.

Was it cancelled it something? S2 is definitely worth a watch regardless. It's legit good and an improvement over S1 imo. The non-linear narrative is a little disorienting at first, but the way they tie the various stories together at the end is really impressive.

Yeah I recently completed a LOST rewatch and was surprised how well it held up. Highly recommended.

Yeah, like you, I found the Sopranos pilot very different tonally from the rest of the show upon rewatching. Possibly the best opening shot in the history of TV though. Rivaled only by LOST in that regard.
Speaking of which, my vote would be either LOST or Breaking Bad.

I'm enjoying HOTD but GOT started much stronger imo. The time jump was disorienting, and the show sorely needs a Tyrion type character to inject some humor and take these people down a notch.

Indeed. Very sharply drawn. All that said, I do share your preference for dialog that's more spare.
