I used frozen peas, I had a couple carrots left from a bunch that weren’t gonna make it much longer so I diced one of those up and used that. Had onions already diced from a day earlier and always have a jar of minced garlic in the fridge 😉.. thank you for the kind words!

Thank you!! Me too it’s really good. I’ll post up next time I make pineapple roast chicken. I core the pineapple and roast the whole chicken on the core. Blend the pineapple, onion, garlic, spices etc and pour it over the bird and marinate it overnight.
