I spent ages analyzing/trying cookware and ended up getting almost everything from Matfer Bourgeat. Very happy I did. We find the handles to be the best for extended use, though that’s a matter of personal preference. They don’t stay as shiny as some of the fancier more consumer oriented brands, but that doesn’t bother us — we are very tough on our cookware and actually like the ‘well worn’ aesthetic that results from it all.

I know it’s not on your list, but in addition to their stainless cookware you may want to consider one of their carbon steel pans for high temperature searing or other non-stick uses.

Vollrath is a similarly utilitarian brand and their higher end stainless lines are apparently well built. We have one non-stick pan that is inherently not BIFL, but has proven to be extremely durable.

We certainly looked at Allclad, but were actually more interested in Demeyere because of the rivetless cooking surfaces and liked the curved handles better than Allclad. Demeyere, like all Zwilling product can occasionally be deeply discounted so make sure you keep an eye out for sales. In the end both brands were a bit heavy and shiny for us.

Consider a cookware organizer/rack for your cupboards as we have found that not everything nests perfectly, even if from the same brand.

We skipped the frills of retail stores and got all our items from restaurant supply stores (either locally or at Katom or Webrestaurantstore online). Your challenge there will often be too much selection, rather than not enough!
