I cold smoke cheese every year for my “man” gifts with friends. Last few years I would cold smoke bars of chocolate and then let it rest for a few weeks in butcher paper in the fridge. Then crush it up and make chocolate chip cookies with it. While good, the smoke flavor was inconsistent.

This year I decided to smoke sticks of butter and make cookies with that. I froze sticks of butter and then cold smoked them for 2 hours with apple wood. They just spent a week resting in butcher paper in the fridge. I vacuum sealed them last night and will use the butter to make cookies.

I see you mentioned your mortgage went up after the reassessment. I would contact your mortgage company and tell them you received this letter. Since you have a mortgage I would assume they sent something to them to indicate the escrow account had a shortage or what. I would get a copy of each year showing the inscreased amount and see if it matches what they are claiming. Also, I would not ignore the letter and instead ask them for proof of the debt. How they came to that amount etc. it’s possible something got mixed up.
