There are cells in the stomach lining that sense protein presence and communicate that to the brain. The brain keeps track and wants to stop after it's reached some kind of threshold, in addition to the bulk making you feel physically full. Not a doc or anything, I can't remember what they're called.

Leptin and Ghrelin are hormones that have a role in energy balance. Leptin is made by adipose cells in the small intestine and decreases appetite by inhibiting hunger so it is impactful in inducing weight loss. Ghrelin is produced by cells in the stomach and increases the drive the eat and so is also sometimes referred to as “hunger hormone”

When you eat something, the production of ghrelin is reduced and that is one of the factors that reduces hunger.

Carbs actually reduce hunger the most, but after a couple of hours the body has burned through those carbs and there's often a rebound of ghrelin higher than it started with. That's what's the behind the idea of "ate a lot of carbs, hungry two hours later" came from.
