never tasted schnitzel other than chicken breast, always wanted to ask whether it pulls apart like chicken breast or is it chewier cause i cant imagine veal and pork not being overcooked and chewy in a schnitzel

Maybe a little bit chewier. I hammer out the pork until it’s super thin. Cook it hot and fast. 2 minutes frying time tops.
