Kinda like sharp cheddar. In this case the provolone has an almost "funky" strong taste like any aged cheese usually does. It's delicious and if you have a primo subs near you they're definitely worth checking out. Really good subs and quality meats and cheese.

Sharpness in cheeses is sort of like bitterness in that it has a very strong initial taste.

bitterness is so not how I'd describe sharpness. It's more like a zing, or bite-y taste.
