Use a mandolin to cut the vegetables very thin, and stack them upright next to each other.

I generally don’t go for as juicy as you have made it. A bit less liquid would be my tip, as well as thinner slices as another user suggested. When you have thinner vegetables, you won’t need as much liquid to fully cook it.

*I should add, it's very hard to get yellow squash where I live so I substituted for sweet potato
