I live in an old house with a whole house attic fan. I can heat that cast iron and through the meat on. I have to say it’s a lovely looking smash burger!

It doesn't, and smash burgers are made with very, very little added fat. You WANT the meat to stick to the pan.

Thanks! It's jalapenos on the bottom, and cheese between the patties. The top and bottom you're presumably seeing is the sauce!

A fried egg is delicious on a burger, especially if it’s over easy/over medium. The egg yolk is so good with the patty, kind of like a very distant cousin to steak tartare. Might be messy, but so worth the extra napkins!

Start with small meatballs and smash them onto a flat top or pan to get a good sear on a thin patty

By smashing a ball flat, you create a rough edge, which you then cook in more grease or oil than you would use normally. This rough edge cooks faster than the rest of the burger, creating a crispy and delicious outer ring of caramelized goodness. You can't really do this on a grill, it needs to be a griddle/pan/flat-top so the edges can fry up.
