You can do this. You can adjust the temperature. Or you can cover with chicken skin smeared with mayonnaise - some people like crispy skin.

Yes. Put 3-4 slices of potatoes (or onions) down and stick skewers in them.

For the marinade use мyonnaise, spices (salt, pepper, favorite herbs), maybe a little lemon juice. For 2-3 hours or overnight. Then cover the baking tray with aluminum foil. Put 3-4 slices of potatoes. Put 3-4 bamboo skewers into them. On skewers alternately put chicken filet, onion slices and potatoes. Brush the layers with marinade. On top of "tower" we put the rest of marinade and we can cover the top with foil not to burn. Put it all in the oven at ~180C (~350F) for ~60 minutes.

I moved to Mexico a few months ago, and I'm used to seeing the temp outside in Celsius now. Yesterday I looked at my laptop and the temp was 85. My first thought was "Shit! It's almost 200 degrees out!".

If you use only salt, black pepper, garlic, and a little lemon juice, it is already very tasty. You can add paprika or smoked paprika. Sometimes I add an "Italian herb blend" or other blends that contain basil, oregano, parsley, dill, thyme and marjoram. But it turns out really good without them, too! )
Yes, I forgot the mustard. Sometimes I add a little, sometimes quite a lot. And so and so tasty, but in different ways.
