How big is the learning curve for someone who hasn’t dabbled too far into these types of RPG’s? I’ve wanted to play Divinity for so long but it’s kind of intimidating.

It's not too bad providing you 'save scum' Save often, reload when you make devastatingly bad choices. It's the only way to authentically learn the genre.

Avoid guides for builds or metas, an rpg should be played with your choices.

Shouldn't be too bad, the Divinity series doesn't have assumed knowledge of a tabletop game and it's not as front loaded when making a build as most. DoS2 has easy respecing though it's more complicated and restricted in DoS1 (and main character only). There is a learning curve but it's more around interactions between elemental effects and learning how to use those which you can pick up as you go.
